Costoluto Genovese tomatoes are rich, meaty heirloom fruits. Since these plants are open-pollinated, seeds from the plants can be saved each year and grown for generations. Large, deep-red fruits have a singularly fluted profile, are deeply ridged, and heavily lobed. However, these highly acidic tomatoes really shine when used for canning and for the creation of full-bodied pasta sauces. Meaty, full-flavored, slightly tart, and delicious.

Historical Notes: The Costoluto Genovese tomato is an Italian heirloom tomato variety. Its heavily lobed and often convoluted shape is indicative of early nineteenth century tomato varieties, but makes an oddity in today’s vegetable garden. The Costoluto Genovese’s stellar flavor is intense and acidic. Because of its odd shape, this tomato is best for sauces and pastes where the skin is removed.
